This is a nightmare to make. We peel a small mountain of fresh root ginger, then juice it to get a really clean, pure flavour that has an almost citrusy edge. Once again, no flavourings! This dressing works well with savoury and sweet dishes, and the warmth of the ginger can add a glow to your dishes.
