Roast Mediterranean Vegetables with Sweet Balsamic Dressing Recipe
Preheat the oven to 200C/ Gas 6/fan oven 180C.
Place all the prepared vegetables in a roasting tin and drizzle over the oil, mixed herbs and balsamic. Stir to coat vegetables.
Grind over seasalt to taste
Place in oven and roast for 40-50minutes, or until the vegetables are well cooked.
Serve and enjoy!
2 courgettes, sliced thickly on the round
1 Large yellow and 1 large red pepper, sliced lengthwise
2 medium red onions, peeled and sliced lengthwise
1 small packet of cherry tomatoes
Drizzle of Little Doone Original or Garlic Sweet Balsamic Dressing
Oil to coat
1 teaspoon mixed herbs or Herbs de Provence
Grind of seasalt
