Eggs Sophia Recipe

Heat the olive oil in a large frying-pan and fry the onions slowly for about 5 minutes or until very soft. Stir in the tomatoes with finely chopped garlic and heat through for about 5 minutes, then add 3 tablespoons of balsamic vinegar. Season generously with salt and pepper. Stir one more time, place the lid on the pan and let it simmer for about 3 minutes. Break the eggs into the onion and tomato mixture. Cook for about 10 minutes or until the eggs are firm. Season the eggs.
Serve and drizzle with a good olive oil and a few drops of balsamic dressing.
